Grown in the high-altitude mountains of Alishan, this coffee benefits from cool temperatures, misty surroundings, and significant day-to-night temperature differences, creating a refined and layered flavor profile.
The honey process retains part of the coffee cherry mucilage during drying, enhancing sweetness and fruity notes while maintaining a clean and balanced cup, finished with subtle brown sugar and wine-like aromas.

蜜處理法

去除果皮之後所殘留的果膠,因為和空氣接觸後產生黏性,如同蜂蜜一般故有此稱。
一開始和水洗一樣去除果皮,接著直接在陽光下進行曝曬,這過程中因為果膠會產生黏性,因此要比日曬花費更多心力去進行翻攪的動作。除此之外,依照果膠所殘留的比例以及曝曬(發酵)程度,另有細分白蜜、紅蜜、黑蜜等處理法。風味上除了結合水洗乾淨口感,更多添了輕盈的果香以及平衡的酸質,偶爾也有伴隨著發酵酒香的尾韻。
Honey Process
After the skin is removed, the mucilage that remains on the beans becomes sticky when exposed to air, resembling honey—hence the name.
Similar to the washed method, the skin is first removed. The beans are then dried under the sun with the mucilage still attached. This mucilage becomes sticky, so the drying process requires more effort than the natural method, with frequent turning to ensure even drying.
Additionally, depending on how much mucilage remains and the degree of drying (or fermentation), the honey process can be further categorized into white, red, or black honey. The flavor profile combines the clean characteristics of washed coffee with delicate fruity notes and balanced acidity, occasionally finishing with subtle fermented or wine-like aromas.
